I thought I had posted something when you guys were asking about it but I guess not.
Please remember that we didn' follow a recipe, we put what we thought would/should taste decent in them, we didn't measure and there was no meat.
Buy a package of Egg Rolll wraps (flat squares) found in the freezer or cooler section (sometimes in the produce cooler as well)
We grated half a cabbage and a couple carrots. Added some baby frozen peas, rinsed and threw in a bunch of fresh bean sprouts. Don't use canned sprouts.
We mixed in some reduced sodium soya sauce and a bit of garlic powder and pepper. Stir it all up.
Get an egg, put it in a seperate bowl (we used only the egg white) and with a basting brush, brush the egg white on the perimeter of the egg roll wrap. Spoon a glob of the mixture (with as little juice as possible)in the centre of the wrap, follow the instructions on the Egg Roll packages as to how to fold.
Heat the oil for deep frying. Make more and set aside. When the oil's hot enough put some of them in but don't overcrowd. Cook till light brown on both sides, remove, cool on a wire rack.
They also freeze well.
Note: We read "after" the fact that you should precook the sprouts.... but we didn't. We figured the hot oil would do the job and they do sputter a bit becasue of the moisture from the veg.
