Buttermilk Oatmeal Muffins Ingredients 1 cup quick-cooking oats, 1 cup buttermilk, 1 egg, beaten, 1/2 cup packed brown sugar or molasses, 1/4 cup vegetable oil, 1 cup all-purpose flour/or 1/2 white 1/2 w.wheat, 1 teaspoon baking powder, 1/2 teaspoon baking soda, 1/2 teaspoon salt Directions In a bowl, soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees F for -18 minutes or until muffins test done. Cool in pan 5 minutes before removing to a wire rack. I also add cinnamon. To make buttermilk substitute........add tbsp. lemon juice or vinegar to measuring cup and add milk to equal 1 cup. I like fresh/frozen cranberries but can add raisins and/or nuts as well. It doesn't call for much oil but I still like to use 1/2 apple sauce...1/2 oil. I buy the pack of 6 little applesauce just for this reason.
