BBQ glazed mini meatloaves (from Kraft's What's Cooking magazine)
1 C hot water
1 pkg. Stove Top stuffing mix for chicken
1 lb. extra-lean ground beef
1 C Kraft Mozza-Cheddar shredded cheese
2 green onions, sliced thinly
1/2 C Bull's-Eye Bold Original BBQ sauce
1 Tbsp. brown sugar
* I have added 1/4 lb. cooked bacon 1 Tbsp. Hoisen sauce I also double this recipe so I can freeze a few meals.
Heat oven to 375* F
Add hot water to stuffing mix in large bowl, stir just until moistened. Add meat, cheese and onions. *and bacon. mix well. Press into 12 muffin cups sprayed with cooking spray. Bake 25 min. or until done, brushing the tops with combined BBQ sauce and sugar *and hoisen sauce for the last 10 min.
* I have also just added most of the glaze to the meat mixture, just leaving enough to glaze the tops once. This is an easy make and freezes well.

I think most people eat meat loaf (we do as well) so....Hmmm; I thought this sounds interesting.. I just asked D what Hoisen sauce was (he didn't know but he has it in the fridge) I think I'll print this off Mary for us to try in the next week or so.... Thank You BUT; what the devil IS Hoisen sauce?

that's what I wondered, too, Blossom....what the heck is hoisen sauce and do you really need it? Also, do you need the cheese as I can't eat cheese? Other than that it sounds really yummy. I love meatloaf. I think I need some new cupcake tins. That's what I can put on the list for Walmart next visit.

Hoisin is a Chinese sauce that can be used like bar b q or dipping. I have done chops with it and also stir fry and its good, kinda a little sweet so I usually add some hot sauce and soy to it. Give it a try, its good and easy to cook with!!

BTW, the meatloaf sounds good, would have never thought of putting them in muffin tins!!!

Sue, Jackie, no you don't need the hoisen sauce, that is something I added just cause we like the flavour. It just adds something to it. Yes you can make it without the cheese, afterall it is meatloaf and you can twig it to suit your tastes. Have fun with it and enjoy.

Mary: thanks for the recipe and especially the idea of adding hoisin sauce. This is kind of similar to the salsa stuffed mini meatloaves I just tried this week, with black beans in the meatloaf mix and a well for a little bit of salsa (and cheese if you like on top). Yummmmmmmy!
