Since it's apple season; and SueNy was looking for a recipe for apples, this one is tasty, tasty and easy to make. Dave likes to warm a bit up in the microwave and put vanilla ice cream with it.
And.... the bonus is that it smells oh so good and homey when you're cooking it.
(Extracted from Company's Coming Cookbook)
You'll need:
1 1/3 C all purp flour 3/4 c granulated sugar 3 tsp baking powder 1/4 tsp salt 1/4 c butter or margarine
1 egg slightly beaten 3/4 c milk, 1 tsp vanilla
2 cooking apples, peeled and sliced
TOPPING:
1/3 c packed brown sugar 1/2 tsp Cinnamon
Preheat oven to 350*
Put flour, sugar, baking powder and salt in a large bowl. Cut or rub in butter until crumbly. Make a well in the centre.
In another bowl beat the egg till frothy, mix in the vanilla and milk. Stir JUST ENOUGH to moisten. (Don't overmix) Pour into a greased 8x8" cake pan. Push apples well into the top of the batter close together.
TOPPING: Mix brown sugar and cinnamon togther and sprinkle over the top. Bake in 350* oven for 50-60 min until it begins to shrink from the edge of the pan. Serves 9

Do ya think that even Mert can make this? I'll bet he can. He bought himself a Mandolin to slice potatoes and could use it for the apples, too. This sounds easier and softer and yummier than my coffee cake recipe that doesnt' have any fruit in it, just cinammon and sugar..
Thanks. Sure wish I had a printer that worked so I could print it all out. I think it's time to invest.

Susan; maybe send it off to your sister (assuming she has a printer) and have her print it off and bring it to you. Just copy and paste it into an e mail to her.
