1/2 cup chopped onion (I used about 1/3 C chopped green part of scallions.. gives good onion flavor ) 1/2 cup sliced celery 2 cloves garlic, minced 3 tablespoons butter 3 cups heavy cream black pepper to taste 3 cups diced ham ( NOTE) you can also leave the ham out and use any vegetable such as broccoli, cauliflower, asparagus, etc. ounces of shredded cheese (I used half white cheddar and half swiss) 1 bottle of Michelobe Ultra In a large pot on medium heat, sauté the onion, celery, garlic and butter until they are just tender. Add cream to pot and stir. Add spices and lower heat to very low. Taste and adjust your spices to taste. I added a bit more garlic. Add the cheese and stir it until it's melted and incorporated in the cream mixture. when cheese is melted add ham and/or vegetables and beer cook on low for about 30 to 45 minutes and enjoy!!
