I never cared for pumpkin and do not eat it. I have eaten many of these cakes. Try it, you should like it. Most everyone likes this and easy to make. Had receipe over 30 years now.
PUMPKIN CAKE
2 cups sugar 1 tspn salt 2 tspn cinnamon 2 cups flour 2 tspn baking soda 1 cup wesson oil 4 eggs 2 cups pumpkin
Mix Well & bake @ 350 degrees for one hour.
FROSTING 1/2 box powdered sugar 3 oz philadelphia cream cheese 1/2 stick butter or margarine 1 tspn vanilla
Frost cake & sprinkle on 1/2 cup chopped walnuts (optional)
Can do just like above. I generally mix up the dry ingredients and then add the rest and mix.
The icing will mix just keep beating. Easier if let the margarine and cream cheese sit out and get little soft, not too soft. I never used anything but Wesson Oil but probably could. That was way I got it and was told and so just never tried anything else. THIS IS SO NICE CAN ALL BE DONE WITH ONE BOWL.

I don't know why I clicked on recipes , and then I saw Marys pumpkin cake and it is exactly like mine but mine calls for carrots. the same amount of everything, and its my favorite cake, delicious ..I see this was posted in Nov. That is when i usually make mine for Thanksgiving .I'll have to try the pumpkin...Mary did you use the canned ones? My mother in law also gave me mine many years ago.

Virginia, You should have seen the look on my face when I just came to the forum and saw Pumpkin Cake showing. Then I clicked in and saw it was mine. I knew I didn't put any recipes in recent. Too Funny. A very good friend gave me that. I use one whole can of the regular pumpkin. The smaller one. It is so easy because it all goes in the bowl and you beat it up. We still make it a lot even all year thru. Since 2002 and Joe does any baking, we have lost count of how many he has made. We have taken them to rehab. Joe doesn't eat nuts and we never put the nuts on the icing. Everyone likes it and so easy to make. Hope you and Doug like it. How do you do it with carrots. I never made a carrot cake. Many years ago I made Carob Cake which was like a chocolate.
