Orange Chicken
Place 4 chicken filets in a casserole dish Mix in a jug 1¼ cup of orange juice 2 tablespoons of vinegar 1 teaspoon of basil Pour over the chicken, then sprinkle with 2 tablespoons of brown sugar. Cover and cook at 350°f (180°C) less for fan oven (I use 165°C) 1¼ hours. Baste or cover the chicken with orange juice, I prefer the later.
I often do the potato dish below with it because it requires the same oven time
Onion & Potato
Peel and slice enough potatoes to suit the number of diners. Peel and slice onions. Layer in a dish potato, onion, potato, onion etc. Season to taste Pour a cup of milk over the top A little butter on top, dotted is good, about a tablespoon in total Uncovered, cook at 350°f (180°C) less for fan oven (I use 165°C) 1¼ hours.

Sounds good but I'm a little skeptical still about those danged chicken breasts. No skin, no bones, all white meat = Dry, dry, dry. Is that what you're using for the orange chicken Larry?
