Sauté one or two sweet onions and two or three yellow squash. Continue cooking until they are very well done.
add salt pepper , to taste and a little cinnamon , if you like, add 2 eggs, 1 cup cream and stir them in. Bake at 350 until set. Aprox 1 hour, depending on your oven.

Linda, I am making this tonight. My Husband is back to doing the Atkins so need some new ones and this sounds good. I am throwing in a zucchini to give it a little green and topping it with parm cheese.

I just had two servings and love it. A gal on another forum sent it to me today. I don't know about the Parmesan cheese with the cinnamon, but it may be just fine. The cinnamon gives it a nice Middle eastern flavor.

Linda, I have to make a correction to my remark the other day. I was in Von's mkt the other day and what I thought was Crook Neck Squash was called Summer Squash in that store. It must have been called Crook Neck in Colorado...duh Pat

that's OK, Pat. On another forum I visit, many in the western US call them crook neck and here on the east coast they are called yellow or summer squash.
