Sorry I was so long getting it posted Bobbi....
1/c C Liquid Smoke 3 C Soy Sauce (I use 50% less Sodium type) 1/2 Lb brown Sugar
(This is enough for 4 lbs of beef or deer meat)
Cut meat in thin slices (1/8th inch thick); discard any fat areas (I also find that if I "frost up" the meat in the freezer it's easier to cut) - Don't freeze it though
Mix the 3 ingredients and let stand for 5 - 10 min while you're cutting the meat.
Place meat into marinade, seal tightly for at least 10 minutes. Shaking up the bowl every few minutes to cover all pieces equally.
Drain the marinade off.
I use a dehydrator myself but maybe you use the oven at low temp. Normal drying time in a dehydrator is 24 - 48 hours and should be rotated every 12 hours.
Remember when you're drying out meat, do not let the pieces overlap.
This is the BEST for deer meat!
