With wild blueberry season up and coming, and it only takes 1 cup to make the best danged Muffins you'll ever eat (I guar on tee it! (Avctually I pick bluberries when in season and freeze them for when I need them)
You;ll need
2 Cups flour 1/2 Cup Sugar 1 Tbsp Baking Powder 1/2 tsp salt 1 Cup Milk 1/2 Cup Melted and cooled butter or margarine 1 Egg (close to room temp) 1 Cup blueberries fresh or frozen
Now; there's 2 secrets to making GREAT Blueberry muffins. Brown them only slightly and DON'T overstir the batter.
Heat oven to 375* Put papers in a 12 muffin pan
Stir the dry ingredients together. In another bowl, combine the egg, milk & butter. Add it to the mixture and stir just enough to moisten. DO NOT BEAT Spoon into the muffin pan (don't worry about the batter being level in the pan)
Bake at 375 for 20 minutes. Add 5 minutes if the berries are frozen.
Note: You can substitute other berries if you want

I am always looking for the perfect blueberry muffin recipe. The one that I usually use I can also make into a 7 X11" pan. Do you think this would work on this recipe? Guess I might just have to try it and see. It's nice to do this when you want to bring a blueberry dessert to a cookout, or what ever.

Do we have to come to Nova Scotia for the blueberries? Seriously, I have tried this recipe and they are delicious! I sometimes throw in a handful of raspberries too...Yummy! Toni

Oh wow, raspberries, too. My mouth is watering. Blueberries are on sale this week, 1.48 a pint. Guess what I'll be baking?!

I have searched many different blueberry receives and came across this one. They are now in the oven and can not wait to try one😄
