This looked so weird I thought I'd post it. Let me know if anyone ever makes it. It came from a radio stations "recipe of the day".
Treeless Maple Syrup
6 medium potatoes; peeled 2 cups water 1 cup dark brown sugar 1 cup white sugar
Boil uncovered the potatoes in water; remove potatoes when about 1cup of liquid remains. Do what you want with the potatoes. Bring the 1 cup of potato water up to boil; stirring slowly add 2 cups of sugar, stirring once sugar is completely dissolved. Remove from heat and cool slowly. Taste, and then age it in a corked bottle in a dark place for several days.
