A quick easy and healthy shrimp dinner w/ Zoodles instead of pasta"
Ingredients:
1. Tbl of butter.
1. TBL OF extra- virgin Olive oil.
2 Zucchini, cut into noodle shape strands.
1-/2 yellow onions, minced.
1. Tbl. Chopped garlic.
1/2 teaspoon of salt ( kosher) or regular.
2 Tbl. Of butter.
1 pound of large Shrimp, Peeled and deveined .
1. Teaspoon of minced garlic. I bought the minced already in the jar. But do as you like.
1. 6oz. Bag of baby spinach.
1 Tbl of fresh lemon juice.
1, teaspoon of red pepper flakes, I didn't use that.
1/2 teaspoon of Kosher salt.
1/2 teaspoon of freshly ground pepper.
Directions:
Heat 1 tablespoon butter olive oil together in large skillet over med. Heat;cook and stir zucchini zoodles,onion,chopped garlic, and 1/2 teaspoon of salt until zoodles are tender and onion is translucent, about 5 minutes. Transfer zoodle mixture into a large bowl.
Heat 2 tablespoons of butter in same skillet;cook shrimp and minced garlic until shrimp are just pink, 3 to 4 minutes.
Add spinach, lemon juice,red pepper flakes,1/1 teaspoon salt,and pepper, cook and stir until spinach begins to wilt, 3 to 4 minutes. Add zoodle mixture;cook and stir about 3 to 4 more minutes.
Enjoy you're healthy meal. You can use no butter and only Olive oil if you wish. I also added 2 yellow Squash for more color and flavor, that's up to you're preference. If mote then 3 people double ingredients.
