3lb. Sweet potatoes cubed, cooked, just until tender. 3, different colored peppers diced, I did yellow orange and red. Up to you. 1. Red onion diced. 1/2 cup of fresh Basil, I grew my own, if you can do that it's wonderful.
Mix all ingredients together in large bowl.
Dressing:
1/3 cup of olive oil. 2/3cups of cider vinegar, if you dont have any I used balsamic vinegar. 1/2 teaspoon of salt. 1/2 teaspoon of honey. 3 cloves of minced garlic, again I used already minced in the jar.its all up to how you feel.
This taste great right away. But it's even better if it mellows in the fridge.
Alternative add ins: Dried cranberries 2 stalks of celery, chopped walnuts or Almonds.
In the dressing: 2 tsp. Curry powder.
I made this with the shrimp Florentine with zoodles as a side dish. I had both negative and positive on this salad. I might add it is heart healthy, but if you're not used to sweet potato salad, it will be very different. Enjoy, Bon Appetite..

Ok, I put up Shrim Florentine as well under main dish. We had this together. Also I made a pie. It was a good meal. Enjoy Jade and you're welcome.
