This is a very forgiving recipe! Amounts don’t need to be exact - more or less can be added to suit your taste.
RITZ Broccoli Casserole
- 30 oz. frozen chopped broccoli (thawed and drained) (florets can be used)
- 12 oz. (3/4 lb.) VELVEETA cheese. (cut into 1/2-inch cubes) I always use more! 😊
- 36 RITZ Crackers (coarsely crushed - about 1-1/2 cups) Divide in half.
- 1/4 cup (1/2 stick) butter or margarine, melted
Heat oven to 350 degrees Fahrenheit.
Mix broccoli, VELVEETA, and half the cracker crumbs until we’ll blended.
Spoon into baking dish.
Mix together the remaining cracker crumbs and melted butter. Sprinkle over the top of broccoli mixture.
Bake appropriately 45 minutes or until heated through.
I do the prep in stages for easy assembly.

Hope everyone enjoys this as much as my family does!
One piece of advice - stick as close to the “original” ingredients as possible. In my “youth” I tried to improve the recipe - fresh steamed broccoli, gourmet cheddar cheese, fancy cocktail crackers, adding a dollop of sour cream, etc. Nothing was close to as good as the original! Lots of good buttery flavor in Ritz crackers and VELVEETA cheese hits just the right note.

I can't wait to make it! Is it salty? I love ritz crackers too my favorite and Velveeta cheese is only one that melts good! Thanks Sally I'll let you know when I make it,! Do you eat this as main course, or is this a side? I also want to make my grandmother's summer squash casserole! Yum. I put up a couple recipes Sally, one with shrimp and a few others, my mom's casserole and Grams must be up here somewhere.

Gail - it is both buttery and a little salty! I usually eat it as a side dish. Rotisserie chicken goes well with it…and keeps the “easy” theme going. 🤣😂🤣

One is under zoodles and shrimp. It calls for a vegget you put the zucchini and squash and twist all seeds and stuff go one end and good stuff comes out in a long noodle for a zoodles , and shrimp. I am unsure if I put up summer squash recipe I'll check later, my phone is going to shut down it almost dead 🤣
