Makes 6 to 8 servings.
3 cups zucchini, unpeeled and chopped. 1/2 cup vegetable oil 1 large onion, chopped 1 cup biscuit mix ( I use a low carb mix ) 4 eggs, beaten 1/2 cup Parmesan cheese 1 tsp salt Dash pepper 2 teaspoons parsley or dill
Preheat oven to 350 degrees F
In a large bowl, beat eggs nd add all the other ingredients. Blend well and pour into a greased 2 quart casserole and bake 35 to 40 minutes.

LindaNY, How finely do you chop the eggplant, or is it cubed ?

Just cut it up into small pieces. I don't fuss much with it.
