Rosemarie was asking about food. Tonight we're having what we call "Slop de Jour"; a very easy, all in one pot meal. For 3 or 4 people (you can adjust to your own family size.) 3 or 4 chicken breasts (skin removed) or 3 or 4 pork chops. Place these in the bottom of a roasting pan. The following ingredients are spread on top of the meat. Sliced potato's - enough for your family size 1 whole onion, sliced or chopped up (whichever you prefer) 2 or 3 stalks of celery - sliced or chopped Sliced carrots - enough for your family. 1 or 2 cans of cream of mushroom soup. I use 2 cans. Use a s-p-o-o-n to spread the soup out of the can over top of all the ingredients and it makes a lovely sauce. (For some reason it won't let me use the word "s-p-o-o-n" spelled out altogether - ) Bake Covered at 325 degrees for 3 hours.

Wow that sounds really good. I will try that tomorrow for supper I have everything it takes. I love those I pot meals. Thank you for thinking about me and posting this. Wow I can't wait. I will let you know tomorrow evening. Tom says he would likt to try it with the chops so chops it is. I kind of figured that he is not a big chicken person. Thanks again Cheryl.

I just wanted to add that if you're only doing enough of this dish for two people with 1 can of mushroom soup, please check it after it has been cooking for 2 hours.

Chicken & Rice1 1/2 cups Minute Rice (Uncooked) 1 1/2 to 2 cups frozen veggies (You can substitute fresh) 1 can cream of chicken or cream of mushroom soup 1 soup can of water 4 skinless chicken breasts (boneless or bone-in) 1/2 cup Salsa 2 cups shredded cheddar cheese Preheat oven to 400 F Mix uncooked rice and veggies in a 13 x 9 inch baking dish Combine the soup and water and pour over the rice mixture Place chicken breasts on top of rice mixture S-p-o-o-n 2 tbsp of salsa over each chicken breast (Why that won't let me type the word s-p-o-o-n, I'll never know) Bake for 40 minutes uncovered Take out and sprinkle with cheese and continue to bake for 10 minutes more (to melt the cheese)
