Cinnamon Peanut Brittle
**If you don't like cinnamon, just leave it out. The recipe works well with or without it.
1 Cup sugar
1/2 Cup light corn syrup *clear in colour, the amber will work, but the brittle will be darker in colour
2 Cups salted peanuts
1 Tsp. butter *no substitutes, it won't work
1/2 Tsp. ground cunnamon *or not
1 Tsp. baking soda
1 Tsp. vanilla extract
In a 2 Qt microwave-safe bowl, combine sugar and corn syrup. Heat, uncovered on high for 4 minutes; stir. Heat 3 minutes longer. (it should be bubbly) Stir in peanuts, butter and cinnamon. Microwave uncovered, on high for 30-60 seconds OR until mixture turns a light amber colour (mixture will be very hot) (and will bubble up the bowl). Quickly stir in baking soda and vanilla until light and foamy, immediately pour onto a greased baking sheet and spread out with a metal spatula (also greased). Refrigerate for 20-30 minutes and break into small pieces. Store in an airtight container. Yield: 1 1/4 lbs. NOTE: this was tested on an 850 watt microwave.
My note: This works great on the micro at my trailer, but y'day on my home micro it turned out more like peanut taffee. (still good) I think it needed more cooking time in the last part.

Sounds divine! Also sounds easier than fussing with candy thermometers and so on. Thanks so much for posting.

Gotta try this. I love peanut brittle but have never made it. I am the only one here that eats it so it would go to waste, but maybe cinnamon will get them hooked, hehhe
